Culinary Specialist / Sushi Chef

Position Overview

We are seeking a skilled Culinary Specialist with a strong focus on sushi preparation to lead the launch and development of a new sushi product line. This role involves hands-on food preparation, staff training, and establishing efficient production systems while maintaining exceptional quality and food safety standards. The ideal candidate is both creative and operationally strong, with the ability to thrive in a fast-paced kitchen environment.


Key Responsibilities

  • Oversee the creation and rollout of a new sushi menu and product range.
  • Prepare a variety of sushi items, including nigiri, maki, and sashimi, with precision and consistency.
  • Develop and refine recipes, portion control guidelines, and preparation techniques.
  • Train and guide kitchen staff to ensure proper food handling, preparation methods, and presentation standards.
  • Maintain strict compliance with food safety, sanitation, and hygiene requirements.
  • Monitor product quality to ensure consistency in taste, appearance, and freshness.
  • Support operations across multiple kitchen stations, including hot, cold, and prep areas when needed.
  • Assist with catering services and other culinary activities as required.
  • Evaluate workflows and recommend improvements to increase efficiency and productivity.
  • Contribute to the setup and standardization of kitchen processes during initial production phases.

Qualifications & Skills

  • Proven professional experience in sushi preparation, including a variety of traditional and modern styles.
  • Solid culinary background with a strong understanding of general kitchen operations.
  • Experience in recipe creation and process development within a food production environment.
  • Ability to train, supervise, and motivate team members effectively.
  • Strong knowledge of food safety standards and quality control practices.
  • Comfortable working in a fast-paced, evolving kitchen or production setting.
  • Excellent communication skills and ability to work collaboratively.
  • Strong attention to detail and problem-solving capabilities.
  • Innovative mindset with the ability to adapt to new concepts and processes.
  • Willingness to work flexible hours, including early shifts, evenings, and weekends on a rotating schedule.
